This week, I'm sharing a wonderful substitute for gut-busting Hot Dogs. Who needs a Hot Dog when you can have a Carrot Dog?!
And just in time for all of your 4th of July festivities, too!
Carrot Dogs with Maple Mustard Sauce

2 long, straight carrots (hot dog length and size but not too thick) 1 t liquid smoke gfvegan hot dog buns Preheat a panini press or outdoor grill. Bring a large pot of water to a boil. Add the carrots and boil for 10 to 15 minutes until they are hot dog-like soft. Drain the carrots and cut them in half lengthwise. Rub liquid smoke on all sides with a knife or your fingers. Place the carrots flat in the press or on the grill, and grill until lightly browned, just a few minutes. Place the carrots in buns and top with your favorite hot dog toppings (ketchup, mustard, relish, etc) or the wonderful maple mustard sauce below.
***This makes four carrot dogs. --- Adapted from Ann and Jane Esselstyn's The Prevent and Reverse Heart Disease Cookbook Maple Mustard Sauce 1/2 c vegan mayo 2 T Dijon mustard 2 T maple syrup Juice from 1 lime Whisk together all ingredients in a small bowl and serve with carrot dogs.
***Note: I use this as a fabulous salad dressing, too. And, it's terrific as a dipping sauce for home fries or faux chicken strips. --- Adapted from Vegetarian Times October 2015
